Ethiopia is a country that has a deeply rooted history in coffee. Ethiopia has strong coffee traditions that go back to the 10th century. Unfortunately, Ethiopia continues to face difficult economic times and remains one of the poorest and least developed countries in Africa. Ethiopia's coffee growing regions are Sidamo, Harrar and Yirgacheffe. Sidamo and Harrar are provincial states. Sidamo is in South Ethiopia bordering Kenya. Harrar is in East Ethiopia bordering Somalia where violence along the border is a constant challenge to stable agricultural and cultural practices. Yirgacheffe is a small region within Sidamo.

2/3 cup of strong coffee or espresso

1 teaspoon of sugar

1 jigger of Irish Whiskey

1/4 cup of heavy cream, lightly whipped

This is best served in a thick glass. So, the first thing you should do is heat the glass with hot water to temper it (keep it from breaking). When the glass is nicely warm, remove the water and add the hot coffee with the teaspoon of sugar and stir. Add your whiskey and then top it with the whipping cream. Coffee A Safe, Healthy Beverage

One of the nation's leading authorities on nutrition said most people would not have expected him to write this, but this is what he wrote in one of his books, "Coffee is a remarkably safe beverage. Its dubious health history, which stretches back hundreds of years, is more image than substance."

The author of that statement explains that researchers produced many studies of coffee drinkers who came to a bad end. But in retrospect, these studies proved to be defective. The bad end was caused by the subjects' smoking, not by their coffee drinking. Now experts agree that coffee is a safe and even healthy beverage. This may be good news that ranks with the recent revelation that dark chocolate (the darker, the better) is loaded with healthful antioxidants and - in small amounts - to avoid a calorie problem - is even upgraded to a heath food.

The above quote is from Dr. Walter C. Willett of the Harvard Medical School who co-developed an excellent book on nutrition with the Harvard School of Public Health entitled Eat, Drink and Be Healthy: The Harvard Medical School Guide to Healthy Eating (2001). Of course, this doesn't mean you can consume any amount of coffee (and the caffeine it contains) without some adverse effects.

Dr. Willett writes, "Drinking too much coffee can give you the shakes, make you irritable, and keep you from sleeping. It's also addictive. Regular caffeine consumers tend to get nasty headaches if they miss their morning cup(s). Drinking espresso, French press, or other coffee that doesn't drip through a paper filter can increase your cholesterol a few points. And people who drink a lot of coffee may be more at risk for developing osteoporosis or breaking a bone. In moderation, though, coffee is low on the totem pole of health risks and even has a number of benefits." They include lower chance of developing kidney stones and gallstones. In addition, in a major study, it was found that coffee drinkers had a 50 percent lower risk of suicide than non-coffee drinkers.

He notes one unresolved health issue for coffee drinkers: "One lingering concern about coffee is its potential for increasing bone loss and risk of fracture. Increased risks with four or more cups per day have been seen in several studies, but the final answer is not in. Given the body of research on coffee, it's safe to say that there aren't any major health hazards lurking in the murky depths of you cup. In short, when drunk in moderation, coffee is no threat to your health."

Other authoritative experts on diet and health have taken this same view. For example, the American Dietetic Association (ADA) Complete Food and Nutrition Guide (2nd Ed.- 2002) gives coffee a clean bill of health: "No scientific evidence has been found to link caffeine intake to any health risks, including cancer (pancreatic, breast, or other types), fibrocystic breast disease (benign fibrous lumps), cardiovascular disease, blood cholesterol levels, ulcers, inflammatory bowel disease, infertility, birth defects, or osteoporosis."

The ADA does have a few special cautions:

"If you are pregnant or nursing ... it's wise to go easy on caffeine."

If you have a medical problem, you might want advice from your doctor on caffeine consumption. For example, in the case of stomach problems, "both caffeinated beverages and their decaffeinated counterparts" can be chancy for some, as both stimulate the flow of stomach acids, which can irritate the stomach lining.

If you are older, you should be aware that caffeine sensitivity sometimes increases with age. You should also be cautioned against letting coffee (or tea or soft drinks) take the place of more nutritious foods or beverages. What might be excessive caffeine varies from individual to individual and may depend on many factors.

The latest material I've seen on coffee contains an even more ringing endorsement of the drink. Bottom Line Health (June 2007) carries a column by an expert on food-based chemical compounds, Dr. Joe Vinson of the University of Scranton, with the headline, "The Amazing Healing Power of Coffee: Fight heart disease, diabetes, memory loss and more...with coffee." Some of these benefits have been demonstrated by epidemiological studies, but further clinical studies will be necessary to confirm the first results. Here are some of those study findings:

-A study published in the American Journal of Clinical Nutrition (May 2006) found that women who drink one to three cups of coffee daily are 24 percent less likely to develop cardiovascular disease.

-Another study in the same publication noted above (February 2007) found that older adults (age 65 and older) who had four or more servings of caffeine daily had less than half the risk of these who consumed smaller amounts.

-A study in the Archives of Internal Medicine (June 26, 2006) found that postmenopausal women, who drank four to five cups of coffee (especially decaffeinated), were 16 percent less likely to develop type 2 diabetes.

-A study in the European Journal of Clinical Nutrition (August 2006) found that non-coffee drinkers had four times the mental decline of coffee drinkers.

-A study in the Archives of Internal Medicine (June 12, 2006) found that coffee might reduce the risk for cirrhosis of the liver, especially in alcoholics.

These latest findings are in addition to some of the benefits of coffee and caffeine documented by earlier studies or experience:

-Caffeine can help you stay alert and prevent fatigue.

-Caffeine may enhance mental performance by "increasing alertness and the ability to concentrate." Readers Digest, Foods that Harm; Foods that Heal (2004).

-Many athletes claim that one or two caffeine drinks an hour before a competitive event improves performance, especially in endurance sports.

-The Reader's Digest book claims caffeine "may abort an asthma attack by relaxing constricted blood vessels."

-Caffeine can also boost the pain-relieving effects of some analgesics, and that's why it is in many over-the-counter pain relievers. Caffeine may have some anti-cancer effects.

The book Nutrition for Dummies (2004) by Carol Ann Rinzler summarizes the case for coffee this way, "In moderation, coffee definitely qualifies for anybody's list of superfoods."

The caffeine in coffee, tea, chocolate and certain soft drinks (mainly colas) may have similar effects, but each of the four types of caffeine-containing foods has different effects on the body.

I recently tasted New Orleans Chicory Blend coffee for the first time. I'd read about it in historical fiction books and was always curious about it. So when this opportunity arose, I thought I'd see what it was all about.

My first question was, "What is chicory?"

Chicory is a perennial bushy herb; it is the common name for curly endive. It is part of the dandelion family. While the leaves are used in salads, it is the root of the plant that is mixed with dark roast coffee. The root needs to dried, roasted, and ground. When brewed, it becomes syrupy and bitter and tastes nothing like coffee.

The Germans began using chicory as a coffee substitute in the 18th century to avoid the tax on foreign luxury items. Napoleon had a plan to make Europe self-sufficient; the best substitute the French could find for coffee (because it is not widely grown in Europe, if at all) was chicory. After Napoleon's demise, most French people went back to drinking coffee, but some never lost their taste for chicory. It was the French settlers that brought chicory to the southern United States. Chicory has been used widely in the United States to "stretch" coffee when coffee and money are scarce.

And my third question: "What does it taste like?"

New Orleans Chicory Blend is usually made with a dark roast coffee and chicory. This American coffee has an earthy, sweet aroma. It is full-bodied with a fair amount of acidity. I found the flavor to be a bit bitter. But I suppose the end result would depend on just how much chicory is used. (The standard ratio is 2 parts coffee to 1 part chicory).

Chicory has no caffeine, so if you're watching your caffeine intake, but don't like decaffeinated coffee, adding chicory may be an option for you.

How About Some Coffee With Your Skin Care?

Coffee and skin care? It might surprise you to learn that in 2006 in the United States over 140 skin care products containing caffeine were launched compared to just 21 in 2003.

Coffee had a hard time of it in the 20th century while the U.S. Food and Drug Administration waffled over whether it was good or bad for you. As we move solidly into the 21st century, more indications of coffee's beneficial properties are surfacing, and nowhere is that more evident than in the lucrative skin care market.

Primarily, coffee and caffeine are finding their way into skin lotions and creams because of antioxidant properties and tightening and firming qualities. Caffeine applied to the skin operates in three ways - as an antioxidant, a diuretic and a vasoconstrictor. Among others, Avon, Neuturogena and L'Oreal have included caffeine in some of their products.

How About Some Coffee With Your Skin Care?

For years, caffeine has been used in products sold to reduce cellulite. It's clear that caffeine dehydrates fat cells by somehow energizing them which in turn causes the sodium/potassium component of the cells to vacate. Consequently, water disappears as well. Bottom line - skin on buttocks and thighs becomes smoother.

Caffeine's vaso-constricting characteristic also makes it a favorite ingredient in eye gels for reducing puffiness and dark circles as well as tightening skin around the eyes. With the explosion in coffee based skin products, it now is seen in body scrubs, face creams and fragrances. Infusing the coffee aroma in products, is thought, on the other hand, to stimulate perkiness by association.

Some promising studies on mice suggest that the caffeine in coffee may kill off skin cancer cells on radiated animals. So far, the results appear promising, but cannot, as yet, be translated to humans. However, many sunscreens do contain caffeine since it has been shown to have some sun blocking effects.

I think one of the hardest parts of working out is getting a consistent workout schedule. After all, coffee is a cultural obsession in the United States.

Chains with thousands of branches like Dunkin' Donuts or Starbucks dominate US daily street life. Especially in the morning (90% of coffee consumed in the US is in the morning), millions of white foamy cups with boldly imprinted pink and orange logos bob across the streets in morning rush hour and on the train. Coffee drive-ins are a saving grace for the rushing army of helmeted and tattooed construction workers. During lunch break, men and women in savvy business suits duck into coffee shops.

Students chill out from early afternoon till late evening on comfy couches at coffee lounges around campus. Police officers clutch coffee cups while guarding road construction sites on the highway. In short, coffee drinkers in the United States can be found just about anywhere you go.

Although the consumption of coffee per capita in the world is decreasing (in the US alone it decreased from 0.711 liter in 1960 to 0.237 liter presently), world consumption is still increasing due to the population explosion. Considering that coffee consists of either 1% (Arabica), 2% (Robusta) or 4.5%-5.1% (instant coffee) caffeine, the average American consumes at least 200 to 300mg (the recommended maximum daily amount) of caffeine a day through the consumption of coffee alone.
The place I frequent to down a cup of coffee is the Starbucks in Stamford, Connecticut. The entrance can be found on the corner of Broad Street and Summer Street, to the left to the main public library with its plain pediment and slim Ionic columns. Since I have been cranky for weeks I hesitate to order a regular black coffee. It is very easy to get cloyed with a favorite food or drink in the US because of the super-sized portions served. The smallest cup of coffee is a size 'tall' (12oz.=0.35l.), after which one can choose between a 'grande' (16oz.=0.5l.) and a 'venti' (20oz.=0.6l.). Half a liter of coffee seems a bit over the top, and it sounds absolutely absurd to my European mind. I finally end up choosing a 'solo' espresso.
Sitting in one of the booth-like seats against the back wall, unable to obtain a prime seat, I feign to read my book while eavesdropping on conversations around to me. Three middle-aged men sit in three ash gray velvet chairs and converse loudly. A vivid dialogue develops, exchanged with half roaring, half shrieking, laughter. They mock a colleague in his absence and then clench their brows in concern while discussing the teeth of one of the men's daughter. Two African-American women sit at a small table opposite the reading-table in the murky light, one of them with a yellow headscarf with black African motifs. Close to the entrance, in the seating area next to the animated conversation, a vagabond is playing solitaire. One by one he places the creased cards with rounded backs over one another, as if he attempts to stick them together. He rendered a couple of dollars in exchange for a small coffee to feel, in the warmth of the front room, nostalgia for a cozy living room and relives a sense of intimacy of having your own house.
It's a bright, sunny, early autumn day, a typical New England Indian summer. Sunbeams radiate through the coloring, flickering foliage, and throw a puzzle-shaped shadow into Starbuck's window. Autumn's hand turns her colorful kaleidoscopic lens. The green ash tree near the sidewalk resembles, with its polychrome colors, somewhat a bronze statue: its stem sulphur bronze, its foliage intermittently copper green and ferric-nitrate golden. On the other side of the cross walk the top of a young red oak turns fiery red. These are the budding impressions of the autumn foliage for which Connecticut is 'world famous' in the US.

Even up to this day I have no clue what the actual difference is between the two, apart from the color of the wrapping: red or gold. Not surprisingly, Starbucks appeals to the laptop genre of people: consultants, students, intellectuals, the middle class, and a Starbucks coffee is a white-collar coffee, while a Dunkin' Donuts coffee is a blue-collar coffee. In Dunkin' Donuts you will run into Joe the Plumber, Bob the barber, and Mac the truck driver. But what is it exactly, that attracts the white collared workers in the US to fall back into the purple velvet chairs?
I imagine their working days filled with repetitive actions and decisions within a playing field of precisely defined responsibilities. How many of the players in these fields get through the day with its routines for simply no other reason than being able to enjoy their daily 30 minutes-escape into the Starbucks intimacy where, for a brief moment in the day, you regain the illusion of human warmth and exotic associations of resisting the coldness of high finance?
For 15 minutes you fall back into the deep, soft pillow of a velvet chair and randomly, and alas how important is that moment of utter randomness, pull a book from the shelves. While, in the background, soothing tones resound of country blues, with its recognition of deep human suffering, a blaze of folk with the primary connection with nature and tradition, or of merengue reviving the passionate memories of adventure and love, you gaze out the window and ponder about that simple, volatile reflection in the moment, strengthened by the physical effect of half a liter of watery coffee that starts to kick in and the satisfaction of chewing your muffin, bagel, cake, brownie, croissant or donut.
It is, above all, that bodily ecstasy caused by a combination of caffeine, sugar and the salivating Pavlov effect. You remember the struggling musician behind the counter taking your order, the amateur poet as you pay her for the coffee and give a full dollar tip, feeling a transcendental bound in your flight from reality. You stare with a fastened throbbing of the first gulps of coffee at the advertisements and poems on the bulletin board, and dauntlessly you think: They are right, they are so right! and what do I care? Why should I care?
But then you look at your watch and notice you really have to run again. 'Well, too bad, gotta go!', or people will start gossiping for being so long away from your desk. And while you open the door, an autumn breeze blows in your face, the last tunes of the blues solo die out as the Hammond organ whispers: 'I throw my troubles out the door, I don't need them anymore'.
